Austrian Apricot Dumplings (Marillenknödel)
Marillenknödel are a typical Austrian dish, consisting of sweet apricot-filled dumplings. They represent social, cultural, historical and geographical aspects of Austria. The term Marillenknödel is linguistically interesting as the term Marille is only used in Austria, while all other German-speaking countries use the term Aprikose instead.
Ingredients
- 1 cup curd cheese (quark/topfen/farmer cheese)
- 1 standard egg
- 3–4 tablespoons semolina flour
- Salt
- at least 5 tablespoons all-purpose flour
- 10 small apricots
- 10 cubes of sugar
- 5 tablespoons butter (or more if needed)
- 2 cups bread crumbs
- 5 tablespoons of sugar
- Ground cinnamon
- Powdered sugar
Steps
- Mix the curd with the egg in a wide bowl. Add the semolina and a pinch of salt.
- Rest about 20 minutes to soak the semolina.
- Mix in enough flour to make a smooth, non-sticky dough. Rest about 10 minutes.
- Meanwhile, halve the apricots. Remove the pits. Replace each with a sugar cube. Put the halves back together.
- Bring a big pot of water and some salt to a boil.
- Divide the dough into 10 equal pieces. Mould into flat, round disks, flouring hands to prevent sticking.
- Wrap each apricot in one disk. Roll between your hands. Make sure there are no holes and the dough sticks to the apricot.
- Put the dumplings into the boiling water. Wait until it boils again, then reduce heat.
- Boil slowly until the dumplings rise to the surface. Cover. Cook another 4 minutes.
- Meanwhile, heat the butter in a pan. Add bread crumbs, sugar and a bit of cinnamon. Fry until light brown.
- Drain the dumplings. Roll in the toasted bread crumbs until covered.
- Serve with the remaining bread crumbs and much powdered sugar.
