Chili (Vegan)
Vegan chili is chili that uses no animal or meat products in its creation. Many variations of a vegetarian based chili have been created using meat substitutes, tofu and even vegetables. The most popular vegan chilis use beans as the main weight of the dish, but others use tofu, eggplant, butternut squash or zucchini.
Ingredients
- 2 cans (30 oz) red kidney beans
- 1 can (15 oz) black beans
- 1 can (15 oz) navy beans
- 1 can corn kernels
- 1 can (6 oz) tomato paste
- 1 medium tomato, chopped (canned diced tomato works too)
- 2 fresh jalapeños (or your favorite chili pepper works too; more if you like it really hot)
- 1 green bell pepper, chopped
- 1 red or yellow bell pepper, chopped
- 2 medium onions, chopped
- 4 medium cloves of garlic, chopped or crushed
- 10 ml chili powder
- 1 large pinch salt (optional)
- pinch of oregano
- 10 ml olive oil (or any other kind of vegetable oil)
- 50 ml molasses
- Chili garlic sauce (optional)
Steps
- Heat olive oil with a few drops of water in large pot. When water sizzles, add onions and garlic. Stir until onions are soft, optionally slightly brown.
- Add chili peppers. Fry a few seconds.
- Add tomato paste, tomato, chili powder, salt and oregano. Stir a few times. Bring to boil, then simmer.
- Rinse beans well. Add to simmering vegetables.
- Drain corn. Add to chili. Add molasses.
- Taste. Add more seasoning if needed, but not salt. Do not add more jalapeños; add chili sauce or chili garlic sauce if not spicy enough.
- Simmer, covered, at least 30 min; longer distributes flavor better. If too thick, add a little water. If too thin, uncover to evaporate.
- Add bell peppers. Stir. Simmer 1–2 min; peppers should stay crunchy.
- Serve with bread.
Notes from the original
- You may add 2 cups of vegetable broth along with the tomatoes before bringing to a boil.
