Curry and Honey Chicken
Due to the experimental birth of this recipe, the measures given are very vague and approximate and can be altered freely. The almonds can be omitted, and if you make your rice a little more interesting (for example: flavouring it with Mexican-ish tomato soup), then you can leave out the vegetable mix altogether.
Ingredients
Marinade
- 3 tablespoons honey or maple syrup
- 1 teaspoon curry powder
- ½–1 cup (120–240 ml) vegetable oil or olive oil
- Salt (1 heaping teaspoon per kilogram of chicken works well)
- Chopped parsley or celery leaves (optional)
Main ingredients
- 4 chicken breasts
- 1 handful almonds
- 1 onion or leek
- 1 red pepper
- 2–4 tomatoes
- 1–3 celery greens (if you add more, they can dominate the mix)
- 1 zucchini or eggplant
- Other vegetables as desired
- ½ teaspoon salt or more
- Cherry tomatoes (optional)
- Cooked rice
Steps
- Combine marinade ingredients. Add chicken. Marinate 6–24 hours; longer is better.
- Peel almonds: boil in small amount of water 1–2 min, cool, squeeze nuts from skins.
- Chop onion/leek finely. Fry lightly in large frying pan with a bit of oil.
- Add vegetables in logical order; tomatoes cook quickly, zucchini can go in from the start.
- Add salt to draw water from vegetables so they stew faster. Cover pan if slow.
- Transfer cooked vegetables to bowl or small pot to keep warm. Fry cherry tomatoes, if using, in remaining oil. Keep separate from other vegetables.
- Fry almonds gently in pan.
- Add chicken. Fry quickly on high heat. When it looks done, cut largest piece open to check inside. Light browning is caramelized honey.
- Serve meat and vegetables with rice.
Notes from the original
- For special occasions, cherry tomatoes will make the meal very interesting (due to the contrast between the sweet chicken, bitter celery and sour tomatoes).
- Adding cubes of salted and fried mango to the meat just before it's done tastes great. Kiwifruit works too, but not as well. Any sour-ish hard fruit should do the trick. Banana is good too, but it doesn't offer the same contrast.
