Deep Dish Pizza

Pizza is a traditional Italian fare that was introduced by immigrants to America in the late 19th and early 20th centuries. In America it has evolved to unique variations, including this Deep Dish Pizza variety. What makes this pizza special is the thicker raised crust which is baked with the pizza. The pizza itself is filled with sauce, cheese, and other ingredients. It is served hot from the oven, cut in…
Ingredients
Crust
- 1 tsp active dry yeast (fast-rising yeast is acceptable)
- ¾ cup (185 ml) warm water (about 90 °F)
- 1 cup (140 g) flour
- 2 tbsp olive oil
- 1 tbsp white sugar
- ½ tsp salt
- 3 cups (400 g) additional flour
- ~1 cup (250 ml) warm water
- 4 tbsp cornmeal (optional)
Toppings
- 1 or more (170 -) can(s) of prepared or homemade pizza sauce
- 450 g shredded Mozzarella cheese
- ¼ cup (20 g) grated Romano cheese (optional)
- ¼ cup (20 g) grated Parmesan cheese (optional)
Steps
Crust
- Mix yeast and ¾ cup (185 ml) warm water in mixing bowl or dough mixer. Stand a few minutes to activate yeast.
- Mix in 1 cup (140 g) flour, oil, sugar and salt into smooth batter. Add remaining flour and water. Mix to slightly sticky dough; adjust with water or flour. Knead until dough springs slightly when touched.
- Rise in greased bowl in warm location until doubled. Punch down.
- Transfer dough to floured surface. Roll or shape to pizza pan shape, with edge up the side for crust. Roll thicker for deep dish, thinner for crisper crust.
- Preheat oven to 425 F.
- Spread pizza sauce on dough, leaving edge crust uncoated. Add optional toppings (pepperoni, sausage, green pepper, etc.). Sprinkle grated mozzarella evenly, leaving edge crust untouched. If desired, sprinkle grated Parmesan and Romano evenly over toppings.
- Bake on rack in preheated oven 25–30 minutes, until crust and cheese are lightly brown. If outer crust browns before middle, line edge with aluminum foil.
- Remove from oven. Cut into about 8 triangular slices.
