Easy Scrambled Eggs
This is a simple recipe for scrambled eggs.
Ingredients
- Eggs
- Butter, margarine, oil or cooking spray (enough to coat pan)
- Salt to taste
- Pepper to taste
Steps
- Heat frying pan (non-stick or well-seasoned cast iron preferred) to medium. Add enough butter, oil or cooking spray to coat bottom.
- Crack desired number of eggs into bowl.
- Add milk or water if desired. Season with salt and pepper; other herbs and spices optional.
- Beat gently with fork or whisk 15–20 seconds. Mixture need not be uniform.
- Add egg mixture to heated, greased pan.
- Scrape cooked egg continuously and gently from pan with spatula or spoon; avoid metal tools on teflon. Cook 30 seconds to 3 or more minutes, depending on eggs, pan and desired consistency.
- Microwave method: grease bowl. Crack one to two eggs into bowl. Mix gently.
- Microwave on high 40 seconds to 2 minutes. Watch throughout; stop when entire mixture has risen somewhat. Overcooking makes it explode.
- Egg comes out in shape of bowl; suitable as sandwich patty.
- Pan method: heat non-stick frying pan over medium heat with bottom covered in butter, margarine, oil or cooking spray.
- Crack eggs directly into pan.
- Immediately mix while lightly sprinkling with salt, 5 seconds.
- Continue mixing until thoroughly scrambled and mixed.
- Turn off heat. Wait 1 min for eggs to cool.
Notes from the original
- Southwestern Scramble, Scrambled Eggs with Herbs, Cookbook:Stir-fried tomato and scrambled eggs, Cookbook:Creamy Cornstarch Scrambled Eggs, Cookbook:Latino Scramble, and the various Omelet Recipes are variations of scrambled eggs.
- The additional ingredient possibilities are virtually limitless. It is common to add a small amount of cream, milk or water (about ½ teaspoon per egg) to the egg mixture before cooking (will make eggs fluffier). Cheese is also popular, and should be added near the end of cooking. Other ingredients to try include: ham, mushrooms, onions, peppers, sausage, tomatoes, olives, bacon, shaved truffles, smoked turkey, spinach, broccoli, tarragon, chives, parsley and asparagus. Dijon mustard is also good mixed into the egg mixture prior to cooking.
