Enchiladas Rojas
Ingredients
- 6 dried ancho chilies
- 1–2 cups boiling water
- 6 tomatoes, peeled, seeded and coarsely-chopped OR 2 cups canned Roma tomatoes, drained and chopped
- ½ cup diced onions
- 1 tsp finely-chopped garlic
- ½ tsp epazote, crumbled
- Sugar
- Salt
- ¼ tsp freshly-ground black pepper
- 5 Tbsp olive oil
- 2 eggs
- 1 cup cream or half-and-half
- 6 chorizo sausages, skinned and chopped OR ¾ lb spiced pork, chicken or turkey sausage, skinned and chopped
- 1 cup crumbled queso blanco OR freshly-grated Parmesan cheese
- 12 tortillas
- ½ cup chopped green onions
Steps
- Soak chilies in boiling water 30 min.
- Wearing gloves, stem and seed chilies. Cut into small pieces.
- Purée chilies and 1 cup soaking water in blender at high speed 20 seconds.
- Add tomatoes, onions, garlic, epazote, sugar, salt and black pepper. Blend to smooth purée.
- Heat 1 tablespoon olive oil in frying pan over high heat 3 min.
- Pour in tomato sauce. Cook 5 min, stirring frequently. Remove from heat.
- Beat eggs with cream or half-and-half until well blended.
- Pour egg and cream slowly into sauce, stirring constantly. Cover. Set aside.
- Fry sausage meat in another pan over moderate heat about 5 min until lightly browned.
- Remove sausage with slotted spoon. Drain on paper towels. Discard fat.
- Stir sausage with 3 tablespoons sauce and ½ cup cheese in small bowl.
- Heat oven to 350°F.
- Dip each tortilla in tomato sauce. Fry 1 min each side in heavy frying pan in very hot olive oil.
- Move tortilla to warm plate. Place about ¼ cup sausage mixture in centre. Roll up.
- Place filled tortillas seam side down in baking dish. Pour rest of tomato sauce over.
- Sprinkle with green onions and ½ cup cheese.
- Bake about 15 min until cheese melts and top browns lightly.
Notes from the original
- Always wear glove when handling hot chillies and do not touch your face or eyes when doing so.
- 3 cups of leftover cooked chicken or pork may be substituted for the sausage; in this case, do not brown it but add it to the tomato sauce directly.
