Molasses Cookies

These cookies can be considered gingerbread cookies, and originally were named as such. They resemble the molasses cookies made by Archway; they use relatively little ginger and are thus not as spicy hot as gingerbread cookies from many other recipes. They are usually somewhat soft and not at all gooey, being halfway between crumbly and chewy. They are generally not crisp, but can be slightly crisp if thoroughly…
Ingredients
- ½ tablespoon vinegar
- ½ cup milk (minus ½ tablespoon for the vinegar)
- ½ cup sugar
- ½ cup (8 tablespoons) shortening
- 1 egg
- 1 cup molasses
- 4 cups flour
- 2 teaspoon baking soda
- ¼ teaspoon cinnamon
- ¼ teaspoon ginger
- Toppings (walnuts, raisins, etc.)
Steps
- Grease or parchment-line cookie sheets.
- Combine the vinegar and milk.
- Combine the baking soda, cinnamon, ginger and 2½ cups flour.
- Cream the sugar and shortening. Beat in the molasses and egg until smooth.
- Alternately mix in the dry and milk mixtures, starting and ending with the dry.
- Mix in more flour bit by bit as needed. Drop cookies may need none. Rolled cookies without refrigeration need an extra 1½ cups (4 cups total).
- Chill the batter in the refrigerator at least 1 hour.
- Drop cookies: scoop batter onto the cookie sheet. Squish with a glass, using a bit of sugar to prevent sticking. Press toppings into the top.
- Rolled cookies: place a pint-sized blob of batter on a flour-dusted surface. Dust the top with flour, press down, then roll out. A cold marble rolling pin is suggested. Cut out shapes. Place on the cookie sheet. Unused dough can be re-rolled, with more flour.
- Bake 8–10 minutes at 375°F.
Notes from the original
- Softened unsalted butter may be substituted for the shortening. Lard is an even better substitute.
