Radish Pie

Radish pie is a savory pie suitable for a vegetarian diet. Radishes, fresh goat cheese, and walnuts give the pie a unique taste, which is most flavorful when served cold.
Ingredients
- 1–2 bunches red radishes
- 1–2 tbsp olive oil
- ¼ cup (60 ml) butter, divided
- 8 oz (227 g) phyllo dough
- 1 red onion, chopped
- 2 tbsp dry sherry wine
- 2 large eggs
- 1 yolk
- ¾ cup (177 ml) heavy cream
- 4 oz (113 g) fresh goat cheese
- ¾ cup (177 ml) broken walnut pieces
- ⅓ cup (80 ml) fresh Italian parsley
Steps
- Preheat oven to 350°F (175°C).
- Wash radishes well. Remove and discard tops. Put radishes in a small baking dish. Drizzle with olive oil.
- Bake about 1 hour. Cool. Cut into small cubes.
- Grease a pie pan with half the butter. Line evenly with phyllo dough pieces. Tuck stray bits under for an edge.
- Heat remaining butter in a large pan. Sauté onion about 5 minutes.
- Add wine and diced radishes. Cook 1 minute. Remove from heat. Pour into pastry shell.
- Mix eggs and cream in a bowl. Pour over vegetables. Crumble goat cheese over the cream.
- Bake at 350°F (175°C) 20 minutes.
- Add walnuts. Bake 15–20 minutes more.
- Remove from oven. Top with chopped parsley.
- Cool completely before serving.
Notes from the original
- Use fewer radishes for milder taste, or add more according to your own taste.
- The radishes can be baked the day before and then refrigerated until you make the pie.
- For a professional look, garnish each serving with a sprig of parsley.
